This delicate dish owes its name to the famous composer and gourmand Rossini (1792-1868). Rossini’s compelling melodies and his impeccable sense of both the stage and the orchestration have been important to the history of opera. French chef Auguste Escoffier created this dish especially for Rossini. This tournedos (tenderloin) is prepared with white bread, pâté de foie gras, meat jelly and truffles.
